Actually I miss this approach to toolbars in 2007. The quick access bar is only a surrogate.

Press the Shift Key, keep it pressed and click on the Underline button to get double underline…. Why waste screen estate

BTW the Underline is now a splitbutton in 2010…

They've finally add Wrap Text in 2007, but still no Center across Selection.

You could always write macros for those functions, then add them to a toolbar that way.

From the Format menu, I add Unmerge cells and Lock cell buttons to my custom toolbar.
Also, I add the Top border command to the Borders palette

Format buttons they should have, but don't — Centre Across Selection, and Wrap Text.
